Fregola Nero di seppia

Fregola is Sardinia's answer to couscous: hand-rolled balls of durum wheat, traditionally roasted in a wood-fired oven. This variety combines light-colored balls with those colored with squid ink— nero di seppia —creating a visually and aromatically interesting combination.

The dark fregola pearls have a slightly briny, maritime aroma reminiscent of seafood, without being overpowering. Their texture is firm to the bite and slightly nutty, typical of oven-roasted fregola.

Classically served warm with clams and saffron broth, or cold as a salad with grilled squid, capers, and lemon zest. A dry Sardinian Vermentino or a mineral Verdicchio pairs well with it.
