Domaine de Chevalier lies in western Pessac-Léognan—one of the coolest vineyards in all of Bordeaux—nestled among dense pine forests, which owner Olivier Bernard aptly describes as his "secret garden." This natural shelter creates a microclimate that allows the grapes to ripen more slowly than in many other appellations in the region. Sandy soils with warming pebbles define the style of this Grand Cru Classé estate: less richness than elsewhere in Bordeaux, but more precision and tension.

In the glass, the Cabernet Sauvignon displays the characteristic profile of this cool site: blackcurrant, cassis, graphite, and a hint of cedar that unfolds with aeration. The texture is silky yet dense—not a heavy, broad mouthfeel, but a stretched, almost elegant structure. The tannins are firm but fine-grained and without harshness. The finish is long with a mineral, slightly earthy aftertaste that clearly reflects its sandy, gravelly origin. A wine that improves with cellaring: drinking window 8–15 years from harvest, depending on the vintage.

Serving temperature 16–18 °C . Decanting recommended — at least 45 minutes before pouring. Pairs well with herb-crusted rack of lamb, braised beef shoulder, aged Comté, or mushroom dishes with truffle oil. Also a good choice to accompany a cheese board with strong varieties.
