Domaine de Chevalier is located in western Pessac-Léognan — one of the coolest sites in all of Bordeaux, nestled between dense pine forests that owner Olivier Bernard aptly describes as his "secret garden." This natural shielding creates a microclimate that allows the vines to ripen more slowly than in many other appellations in the region. Sandy soils with warming gravel deposits define the style of this Grand Cru Classé address: less fullness than elsewhere in Bordeaux, but more precision and tension.

In the glass, the Cabernet Sauvignon shows the characteristic profile of this cool site: blackcurrant, cassis, graphite, and a hint of cedarwood that unfolds with increasing aeration. The texture is silky and dense at the same time — not a heavy, broad mouthfeel, but a stretched, almost elegant structure. The tannins are firm but fine-grained and without harshness. The finish is long with a mineral, slightly earthy aftertaste that clearly reflects its origin on sandy gravel soil.

Serving temperature 16–18 °C. Decanting recommended — at least 45 minutes before pouring. Pairs with rack of lamb with a herb crust, braised beef shoulder, aged Comté, or mushroom dishes with truffle oil. Also a good choice as an accompaniment to a cheese platter with strong varieties.
