A dry winemaker's sparkling wine from the Palatinate that shows what traditional bottle fermentation can achieve in German hands: fine perlage, clear structure, not a gram of sugar too much.

The Wageck Pfaffmann winery is one of the established addresses in the Palatinate — a region known for its variety of grape varieties and its comparatively warm sites. The cuvée combines Chardonnay and Pinot Noir, two classics of sparkling wine production, into a sparkling wine that was fermented directly in the bottle according to the traditional Méthode classique. This process is more elaborate than tank fermentation, but it is the reason for the creamy texture and the depth in the glass.

On the nose, light stone fruit, a hint of brioche and fresh citrus notes appear. On the palate, the extra-brut dosage — i.e., hardly any residual sweetness — characterizes the picture: lively, lean, with a long-lasting, slightly mineral finish. The perlage is fine and even.

Well-chilled at 7–9 °C as an aperitif, with oysters, goat cheese or a light fish dish. This sparkling wine also cuts a fine figure as an accompaniment to sushi or Asian appetizers with a play of acidity.
