Franciacorta has established itself as Italy's answer to Champagne — and Contadi Castaldi is one of the houses that underpins this reputation with consistent work. The Blanc Extra Brut shows what the hills south of Lake Iseo can achieve: a cuvée of equal parts Chardonnay and Pinot Bianco, which is aged with minimal dosage and therefore requires no sweetness.

The nose reveals green apple, crisp pear, and a hint of citrus zest. The perlage is fine and persistent, the palate is lean and characterized by lively acidity — no melt, no sugar to cushion the fruit. The finish is dry, with a slightly mineral note that is reminiscent of the region's calcareous soils.

This Franciacorta is suitable as an aperitif, but also stands its ground alongside seafood, crudo di pesce, or a mild goat cheese. Serving temperature: 7–9 °C.
