Chablis Les Preuses AC Chablis Grand Cru 0.75L

Les Preuses is one of the seven Grand Cru vineyards of Chablis and is located on the steepest, southwest-facing slope above the village — a terroir of Kimmeridgian limestone and oyster fossils that gives the Chardonnay a minerality that hardly any other French appellation achieves.

Baron Patrick vinifies this plot as a dry white wine that shows the classic Chablis style in its purest form: no butter, no heaviness, instead a clear line. In the glass, aromas of white peach, citrus zest, and wet chalk appear, along with a characteristic iodine tone that connoisseurs describe with the term Goût de Pierre à Fusil — gunflint. The palate is taut, the acidity precise and long, the finish salty and persistent.

This Grand Cru is best paired with dishes that do not mask its minerality: oysters or scallops in the shell, turbot with beurre blanc, or aged Comté. Drinking temperature: 10–12 °C.
