BRUSCHETTA - Sugo with diced tomatoes

This sugo is called Bruschetta because it's made in the style of classic Italian antipasto: coarsely diced tomatoes, flavorful ingredients, and clear aromas without any unnecessary frills. The result is a sauce with a bite and character—the tomato pieces remain recognizable and give the dish texture.

The sugo is best served with larger, robust pasta shapes. Mezze maniche or tuffoli soak up the sauce and hold its robust flavor perfectly. It also makes a great quick appetizer on toasted bread. A dry Sangiovese or a young Montepulciano d'Abruzzo pairs well with it—wines with acidity and fruit that complement the tomato's richness.
