Amarone della Valpolicella classico DOCG

Amarone della Valpolicella is one of Italy's most concentrated red wines — and the Classico from Santa Sofia shows why the appassimento process has been cultivated in Valpolicella for centuries. The grapes from the classic zone around Negrar and Sant'Ambrogio are dried on bamboo racks for 80 to 100 days after harvest before they are fermented. During this time, they lose up to 40% of their weight — what remains is pure expression.

The wine glows in deep ruby red in the glass. On the nose, it opens with Amarena cherry, plum, and a characteristic hint of bitter almond — the typical aroma profile of the Corvina-Corvinone-Rondinella cuvée that stands for every classic Amarone. On the palate, it appears dense and structured, with powerful but ripe tannins and a freshness that one does not always expect from this type of wine. The finish is very long and remains in the memory with a slight bitter note.

Pairs well with slowly braised beef, a risotto all'Amarone, or a piece of dark bitter chocolate with at least 70% cocoa content. Serving temperature: 16–18 °C, served in a large red wine glass so that the aromas can fully unfold.
