A Pétillant Naturel from South Tyrol that shows what the region can do beyond its classic style: spontaneously fermented, finished in the bottle, without dosage and without filtration. The fine, creamy fizz is no coincidence, but the result of the Méthode Ancestrale — the oldest way to make wine sparkle.
The Kellerei Kaltern is one of the largest and most famous cooperatives in South Tyrol, founded in 1900 at Lake Kaltern. With the Pét Mat Bianco, it ventures a step towards natural wine aesthetics: Sauvignon Blanc, grown in the hills around Kaltern, provides the aromatic basis for this light, unconventional sparkling wine.
In the glass, it shows a light straw color, often with slight cloudiness — typical for unfiltered Pét-Nats. The nose brings fresh gooseberry, elderflower, and a hint of green bell pepper, as Sauvignon Blanc from cooler locations provides. On the palate, lively and lean, with crisp acidity and a dry, short finish. The fizz is delicate, almost gentle — no comparison to conventional Prosecco.
Best served well chilled at 7–9 °C: as an aperitif, with goat cheese, light summer dishes, or vegetable antipasti.
