Wiston Brut NV

An English sparkling wine that shows why the chalk soils of the South Downs have long been compared to Champagne: structured, precise, with real depth.

The Wiston Estate is located in West Sussex on the same chalk formations that stretch under the English Channel into Champagne. The winery was founded in 2006 and works with Chardonnay, which develops a distinct acidity structure on these mineral-rich soils. The Brut NV is the estate's calling card — a cuvée that combines freshness and complexity.

On the nose, green apple, freshly sliced lemon, and a hint of sourdough, accompanied by roasted walnuts and apricot in the background. On the palate, a finely effervescent mousse, notes of apple compote, cold butter, and candied citrus peel, rounded off by a toasty finish. The finish is long, mineral, and refreshingly cool.

Serve it at 7–9 °C as an aperitif or with oysters, grilled turbot, or a mild goat cheese.
