A varietal Chardonnay from the chalk soils of the South Downs in West Sussex — Wiston Estate is one of the most convincing addresses in English sparkling wine. The winery is located on one of the few terroirs in Great Britain that geologically and climatically shows real parallels to Champagne: the same chalk, similar daylight length, cool nights that preserve the acidity structure.
On the nose, lemon zest, ripe greengage, and a hint of nougat. On the palate, the Blanc de Blancs shows pastry notes, candied lemon peel, and a fine butteriness reminiscent of freshly baked scones. The perlage is creamy, the finish long and carried by lively acidity — typical for Chardonnay that comes to maturity in a cool climate.
Serve well-chilled at 7–9 °C. Pairs with oysters, scallops with lemon butter, or a mild goat cheese. Also convincing as an aperitif if you want to bring something special from Great Britain to the table.
