Stark-Condé Oude Nectar

Cabernet Sauvignon from the Jonkershoek Valley — one of the coolest and wettest valleys in the Stellenbosch region. This location noticeably influences the style of Oude Nektar: more structure, more acidity, less warmth than many other South African wines.

Stark-Condé was founded in 1998 by the American oenologist Jose Conde and today works with vineyards directly within the Jonkershoek Nature Reserve. The combination of weathered granite soils and the cool maritime influence from the nearby Indian Ocean gives the wines a freshness and minerality typical of the region.

In the glass, the Oude Nektar displays dark cassis and black cherry, along with cedarwood and a subtle hint of peppermint in the background. The tannins are firm but not harsh—with a little aeration, the wine opens up and reveals more depth. The finish is long, with a cool, almost mentholated edge.

Serving temperature 16–18 °C. Drinkable now, but with potential until 2030. Food pairings:

Stark-Condé

Stark-Condé: Craftsmanship Meets International Class in the Jonkershoek Valley. Behind this name lies a family history: "Stark" refers to the German roots of founder Hans Schröder, while "Condé" refers to his Cuban son-in-law, José Condé, who founded the winery in 1998. What began as an ambitious experiment with minimal equipment quickly developed into an internationally recognized name – their first Cabernet Sauvignon set new standards. In the Jonkershoek Valley near Stellenbosch, the family cultivates their vineyards organically and sustainably at altitudes between 150 and 600 meters. The weathered granite soils, the cool climate with its penetrating winter rains, and the constant wind create ideal conditions for mineral, complex wines. The philosophy is evident in the cellar: spontaneous fermentation with wild yeasts, sensitive aging in French oak, and a complete avoidance of fining and filtration. Stark-Condé is famous for its expressive Cabernet Sauvignons, but also presents elegant Syrahs and multi-layered white wines – consistently handcrafted, consistently honest.
