A Pouilly-Fumé that shows what Silex soil can get out of Sauvignon Blanc: mineral, precise, with a pull that lingers long.
Domaine Châtelain manages the Les Cailloux site near Saint-Andelain, one of the most renowned villages in the appellation. There, about 40-year-old vines grow in pebbly, flint-containing Silex soils – exactly the subsoil that gives Pouilly-Fumé its characteristic smoke and tension.
In the glass, the wine shows gooseberry and white grapefruit, plus an unmistakable mineral vein reminiscent of wet flint. The body is taut, the acidity lively without sharpness, the finish long and salty. Not a lush, but a precise white wine – with backbone.
Best served at 10–12 °C. Classic accompaniment: goat cheese from the Loire (Crottin de Chavignol), grilled sea bass, or scallops with herb butter. Also a safe choice as an aperitif with oysters.
