Pernod is the classic French aniseed liqueur — clear, herbaceous, and unmistakable in its style. Since 1805, the name has stood for the style of the Marseilles pastis tradition: star anise as the aromatic backbone, complemented by a bouquet of herbs including fennel, mint, and other botanicals.
In the glass, Pernod displays an amber-yellow color that turns milky white when mixed with water—the typical louche effect that characterizes every aniseed spirit. The nose is dominated by fresh star anise, followed by cooling herbal notes and a hint of sweet fennel. On the palate, it is light and slightly sweet with a fresh, almost menthol-like coolness in the long finish.
