
Pane Carasau
Pane Carasau is the traditional flatbread of Sardinia—paper-thin, crispy, and a staple food for Sardinian shepherds for centuries. The dough consists of just four ingredients: durum wheat semolina, water, brewer's yeast, and salt. The result is wafer-thin, golden slices with a texture that crackles when broken and melts in your mouth.
In Sardinia, Pane Carasau is traditionally dipped briefly in broth, then topped with tomato salsa and grated pecorino cheese, and stacked in several layers—creating the dish Pane Frattau . It's equally delicious on its own as an accompaniment to antipasti, olives, or cheese. Serving temperature: room temperature. It pairs particularly well with a young Sardinian Vermentino or a light Cannonau.
