Louis Despas Crémant Rosé de Loire

Color and effervescence: bright, shimmering raspberry pink, fine, persistent streams of bubbles. Aroma: fruity with fresh aromas of juicy raspberries, strawberries, and delicate hints of fragrant yeast pastries. Taste: lively, racy, fresh, and elegant, with fragrant wild berry aromas on the palate. The fine mousse gives the Crémant a soft fullness, well-structured with a beautiful balance of fruity freshness and a delicately melting sweetness in the finish. Only the best grapes are selected and brought to the winery. After a short maceration period, during which color and aroma compounds are extracted from the grape skins, the first alcoholic fermentation takes place in temperature-controlled stainless steel tanks. The wines are then racked, very gently clarified by cold sedimentation (i.e., they are cooled until all solid particles have settled at the bottom), and blended to create the cuvée before being bottled using the traditional method (Champagne method) for the second fermentation. To reach its full potential, the Crémant then matures for many months in the deep chalk cellars of the Saint Hilaire-Saint Florent Abbey until Louis Despas finally releases it for sale.
