Funghi porcini sott'olio
Porcini mushrooms preserved in olive oil, sweet and sour with vinegar and herbs — a classic antipasto from the Italian pantry. In Italy's top restaurants, preserved porcini mushrooms have been a staple at the table for generations, served long before the first course.
The pickling process preserves the firm texture and earthy aroma of the mushrooms. In the mouth, the intense porcini flavor combines with the mild acidity of the vinegar and the scent of the herbs – well-rounded, spicy, with a long finish.
Classically served with creamy polenta or alongside air-dried ham. Also delicious on toasted sourdough bread or as part of a mixed antipasto platter. A dry Vermentino or a light Barbera d'Asti pairs well with it.
