Dr. Hinkel is a Rheinhessen winery with a long tradition in the cultivation of classic grape varieties. Chardonnay as an ice wine is a rarity — the grape variety brings its natural fruit fullness and acidity structure into an extraordinarily dense concentration here.
On the nose, apricot, blossom honey, and herbal tea, plus an unusual radish accent that signals depth. On the palate, candied orange peel, panettone with dried fruits, and a creamy melt. The sweetness is compact, not sticky — held by a mineral freshness that keeps the wine lively. The finish shows orangeade and dried fruits again, long and concentrated.
Serving recommendation: Serve well-chilled at 8–10 °C. Pairs with blue cheese like Roquefort, apricot tart, or crème brûlée with orange zest. Also an experience pure as the conclusion of a festive menu.
