Domaine La Barbotaine Sancerre Blanc AOC

Sancerre by Frédéric Champault – this is Sauvignon Blanc on calcareous Kimmeridge soil, just as it should be: clear, mineral, without exclamation marks.

Domaine La Barbotaine lies in the heart of the appellation, on the typical Caillottes and Terres Blanches of the Sancerre commune. Frédéric Champault cultivates the vineyards with the precision that distinguishes the best producers of this region – no oak aging to mask the origin, but rather stainless steel tank vinification that allows the soil to speak for itself.

In the glass: lemon zest and white grapefruit, beneath which lies a layer of green apple and fresh herbal spice. The acidity is lively but never harsh – it runs like a thread across the palate, culminating in a salty, lingering finish with a distinct limestone character.

Serving temperature 10–12 °C. Drinking window 2024–2027.
It goes well with goat cheese (Crottin de Chavignol – the classic Loire combination), ceviche, grilled sea bass with fennel or asparagus with hollandaise sauce.

Domaine La Barbotaine – Frédéric Champault

The winery is the legacy of the Champault winemaking family. Frédéric Champault, the current owner, is the son of Roland Champault and the grandson of Louis Champault, both of whom were winemakers. He settled in La Barbotaine in 1994 and initially worked with his parents on the estate. Later, he took over the vineyards of his father-in-law, Lucien Dauny, a winemaker in Les Epinières, also in La Barbotaine. In 2021, the winery was awarded the High Environmental Value (HVE) certificate.
