Échézeaux is one of the most coveted Grand Cru sites in Burgundy — and the Domaine des Perdrix holds a plot monopoly here, which the Devillard family has consistently managed according to the principles of lutte raisonnée since the 1990s. The wines from Prémeaux-Prissey are considered a precise expression of the Côte de Nuits.

In the glass, this Pinot Noir shows a deep garnet red. The bouquet opens with blackberry, sour cherry, and blueberry, behind which are violets, a hint of cedar wood, and subtle spice from aging in the Burgundy barrel. On the palate, medium to full body, fine-grained tannins, and a lively acidity that provides tension and length. The finish is dry, mineral, and clearly persistent.

With cellar aging, it unfolds more complexity. Temperature: 16–17 °C. Good with wild duck breast, Coq au Vin, mature Époisses, or a strong beef fillet.

Domaine des Perdrix, located in Premeaux-Prissey near Nuits-Saint-Georges in the heart of Burgundy, is a renowned winery known for its first-class Pinot Noir wines. Since 1996, the winery has been owned by the Devillard family, who also operate other prestigious wineries such as Château de Chamirey and Domaine de la Ferté.

Domaine des Perdrix covers 12 hectares of first-class vineyards. The most famous is the Premier Cru "Aux Perdrix," which is almost entirely owned by the winery and is characterized by its complex and deep aromas.

The wines of Domaine des Perdrix are an expression of the region's unique terroir. From careful hand-picking to gentle destemming and long aging in oak barrels – every step is carried out with the utmost precision to create wines of outstanding quality.

The wines typically age for 18 months in oak barrels, with the proportion of new oak varying depending on the wine: 30% for village-level wines, 60% for Premier Crus, and up to 90% for the Grand Crus.
