Château Hyot Côtes de Bordeaux

The grapes for the Grand Vin des Château Hyot are selected from the estate's finest parcels. While the yields from these vines, some up to forty years old, are low, they are of exceptional, aromatic quality.

The perfectly healthy, optimally ripened grapes are carefully harvested by hand into small harvesting crates, immediately taken to the winery, sorted again by hand and then cold-macerated for some time to concentrate the first aromas and color pigments from the berry skins.

This traditional cold maceration is followed by traditional alcoholic fermentation, malolactic fermentation in 100% new oak barrels, and finally 18 months of aging in barriques on the fine lees (60% new wood) before the cuvée is bottled at the château and released for sale as Château Hyot.

On the palate, the Bordeaux Château Hyot presents itself as fruit-forward (plum-like), very elegant, straightforward, powerful, full-bodied, with a beautiful balance of ripe tannins, juicy fruit, spice, and fresh acidity. The finish is long and balanced with fine minerality and an aromatic hint of toast. Wine Enthusiast awarded 92 points for the 2020 vintage.
