Château de Haute-Serre Georges AOP Cahors 0.75L

The Georges is the flagship of Château de Haute-Serre — a Cahors that shows what Malbec can achieve on the black limestone causses of the Lot Valley when given time and seriousness.

Château de Haute-Serre is located on the Causse plateau above Cahors, far from the river and its milder soils. Georges Vigouroux literally built the winery from scratch starting in 1971, clearing garrigue and replanting the stony high-altitude sites with Malbec — the grape variety traditionally called Côt in Cahors, which turns out significantly more powerful and structured here than its Argentine counterpart. The Georges bears the founder's first name and represents the house's most ambitious line.

In the glass, it shows the typical dark color of Cahors Malbec: deep ruby red with violet reflections. On the nose, dark plum, blackberry, and a hint of violets, plus licorice and an earthy, mineral undertone that recalls the limestone of the high altitude. On the palate, powerful but ripe tannins, full body, a supporting acidity, and a long, spicy finish with hints of black pepper and tobacco.

Good with confit de canard, lamb with herbs of Provence, or strong hard cheese like Ossau-Iraty. Serving temperature: 16–18 °C.
