A classic Champagne that shows without ado what the house of Virginie T. is capable of: a precise Brut style with 7.5 g/l dosage that keeps freshness and maturity cleanly in balance — neither too dry nor too pleasing.
Virginie T. is a Récoltant-Manipulant from the Champagne — a producer who grows their own grapes and vinifies them themselves, instead of buying in grapes or base wines. This control over the entire chain from the vineyard to the bottle shapes the style: artisanal, clearly defined, with recognizable origin. The cuvée is based on Pinot Noir, which in the Champagne traditionally stands for structure, red fruit, and physical fullness, and gives the wine backbone.
In the glass, a fine, persistent perlage appears. On the nose, stewed red fruits — cherry, a hint of raspberry — combine with the scent of white flowers and subtle bread tones, which point to proper yeast aging. On the palate, medium fullness, lively but not aggressive acidity, and a clean, dry finish with a slightly mineral note.
Served at 8–10 °C, it is suitable as an aperitif as well as with salmon canapés, mild soft cheese, or scallops with butter sauce. Those serving it with a meal will be right with poultry in a light sauce or a simple lobster bisque.
