Chablis without wood, without compromises: Louis Michel & Fils is one of the most consistent addresses in Chablis — for decades exclusively steel tanks, no barriques, no embellishment.

The winery cultivates its plots around the town of Chablis with vines that are on average 25 years old. The location on Kimmeridgian limestone—the typical oyster limestone of Chablis—provides the wine with its foundation. Fermentation with natural yeasts, spontaneous malolactic fermentation, and six months of aging on the fine lees in stainless steel tanks: everything is designed to let the origin speak for itself, not the cellar.

The glass reveals white peach and ripe apple, followed by a clear line of chalk and a hint of dried herbs. The palate is medium-bodied, the acidity precise without harshness, the finish long and salty-mineral.
