Bibi Graetz Testamatta

Bibi Graetz Testamatta
Pure Sangiovese that shows what old vines on stone-rich Tuscan hills can achieve – the Testamatta is Bibi Graetz's most personal interpretation of this grape variety.
Bibi Graetz grew up as a painter at the Castello di Vincigliata above Florence and began in the early 2000s to vinify the overgrown old vines around the estate. Today, he is one of the best-known career changers in Tuscany – with a style that combines classic signature with artistic freedom. The Testamatta, translated roughly as "crazy head," comes from old Sangiovese parcels on stone-rich, well-drained soils of the Chianti hills.
In the glass, it shows dark cherry, dried blackberry, and a hint of violet, underscored by fine spice and a mineral pull. The tannins are present but ripe and silky – the finish long, with an invigorating acidity line typical for Sangiovese at high altitudes.
- Food: Bistecca alla Fiorentina, game ragù, ripe Pecorino
- Temperature: 17–18 °C
