Bibi Graetz Colore Bianco

Ansonica has been at home on the island of Giglio since humans first started making wine there — and the Pietrabona vineyard, 50 meters from the sea, shows what this grape variety can achieve when granite, wind, salt, and sun work together. Bibi Graetz vinifies this parcel separately because the terroir demands it: sandy soils over broken granite, sea air, and intense sunlight.

The Colore Bianco matures in steel tanks — a conscious decision that preserves the freshness and salty minerality of the site in an unadulterated way. In the glass, it opens with orange zest, a hint of dried herbs, and fine spice, which are already hinted at during fermentation. On the palate, it is dense and structured, with a lively acidity that underscores its coastal nature, and a long, slightly salty-mineral finish.

Drink it at 10–12 °C with grilled sea bass, seafood with lemon, or a simple spaghetti alle vongole — dishes that bring the same directness and power as the wine itself.
