Agrodolce ai Fichi is an Italian fig vinegar that brings the classic agro-dolce principle to the glass: agro stands for sour, dolce for sweet — and it is precisely this balance that distinguishes it from ordinary Aceto.
The initial taste is dominated by the soft sweetness of ripe figs, followed by a subtle acetic acidity. The consistency is slightly syrupy, the finish fruity and smooth without any harshness.
In the kitchen, it proves versatile: as a dressing base for bitter salads like radicchio or arugula, as a contrast over aged pecorino or cream cheese, or over vanilla ice cream for an elegant sweetness with depth. A light Lambrusco or a glass of Moscato d'Asti pairs well with it.
