Acetaia Giuseppe Giusti was founded in Modena in 1605, making it the oldest still-operating balsamic vinegar producer in the world. Today, the 17th generation of the Giusti family runs the company—a continuity that is directly reflected in the product: traditional recipes, historic barrels made of oak, chestnut, and cherry wood, and slow aging according to the Solera principle shape every drop.

Giusti's Aceto Balsamico di Modena is made from cooked grape must from the Emilia-Romagna region, which matures for years or even decades in banks of wooden barrels of varying sizes. The longer the maturation, the denser the consistency and the more complex the interplay of sweetness, acidity, and wood aromas. The range extends from young, lively condiments for everyday use to aged balsamic vinegars that reveal their full depth when served with Parmigiano Reggiano, strawberries, or vanilla ice cream.
