Mariangela Montanari from Vignola, Modena is the most balsamic-passionate and thoroughly enthusiastic person you will ever meet. Mariangela grows all her own grapes in Modena and strictly adheres to the cultivation practices of organic farming. Mariangela grows her own grapes organically on 6 hectares of vineyards, and the grapes she uses are typical of the Modena area: Trebbiano, Pignoletto, Lambrusco, Cabernet Sauvignon, and Vignola. Since 2016, all products have been produced organically and are ICEA Certificato Biologico certified.

La Cà dal Non stands for artisanally produced balsamic from the heart of Emilia-Romagna. Behind the business is Mariangela Montanari from Vignola, a small town south of Modena that has been known for its vinegar tradition for generations. On six hectares of vineyards, she grows the grapes that are typical for the region: Trebbiano, Pignoletto, Lambrusco, Cabernet Sauvignon, and the local Vignola variety.
Since 2016, Mariangela has worked exclusively according to the principles of organic farming — certified by ICEA Certificato Biologico. No purchased grapes, no compromise on the raw material: what goes into the barrels grows on her own land. This consistent control from the vineyard to the finished product is rare, even in the Modenese.
The balsamic from La Cà dal Non is not a mass-produced product, but the result of patience and conviction. It goes well with aged Parmigiano Reggiano, strawberries with little sugar, or as a finish on a piece of fried liver — wherever acidity and depth are required, not just sweetness.
