Mariangela Montanari from Vignola, Modena, is the most passionate and enthusiastic balsamic vinegar enthusiast you will ever meet. Mariangela cultivates all her own grapes in Modena, adhering strictly to organic farming practices. She grows her grapes organically on 6 hectares of vineyards, and the grape varieties she uses are typical of the Modena area: Trebbiano, Pignoletto, Lambrusco, Cabernet Sauvignon, and Vignola. Since 2016, all her products have been organically produced and are ICEA Certificato Biologico certified.

La Cà dal Non stands for balsamic vinegar that is in one hand from start to finish: Mariangela Montanari grows, presses and matures it on her farm in Vignola , a few kilometers south of Modena, on 6 hectares of her own vineyard.

The grapes — Trebbiano, Pignoletto, Lambrusco, Cabernet Sauvignon and the local variety Vignola — have been grown exclusively according to organic farming principles since 2016 and are ICEA Certificato Biologico certified. No purchased musts, no compromises on the raw materials.

What Mariangela creates is the result of patience and a deep connection to her home: must from her own vineyards, slowly reduced, then aged for years in barrels made of various types of wood. The balsamic vinegar from Vignola reflects this origin in its flavor—rich, complex, with an acidity that is supportive without being harsh. Ideal with Parmigiano Reggiano, grilled meats, or simply drizzled over vanilla ice cream.
