Vin Jaune Arbois

Vin Jaune is not a wine you drink casually — it demands attention and rewards it with a depth of aroma that hardly any other white wine category achieves. This Arbois from the Jura stands for one of the most idiosyncratic vinification traditions in France.

Domaine du Pélican works in the heart of the Jura with the autochthonous grape variety Savagnin, which thrives exclusively in this region. The Vin Jaune matures for at least six years in oak barrels that are deliberately not topped up. A protective veil of yeast — the so-called voile — settles over the wine and prevents oxidation while simultaneously building up an unmistakable aroma profile.

In the glass, it shows a deep golden yellow. The nose carries walnut, hazelnut, and almond, underneath toast, honey, and a hint of cinnamon. On the palate, the wine is dense and complex, with a striking spice and a long, nutty-dry finish. The acidity remains present and keeps the wine lively despite all its fullness.

Classic with Comté — ideally with a similar maturation time. Also with morels in cream sauce, roasted poultry, or strong mountain cheese. Drinking temperature: 14–16 °C, preferably in a wide glass with some aeration time.
