Protos Verdejo

A fresh white wine from the Spanish highlands — aromatically approachable, yet with enough structure to also be convincing with food.

Verdejo is the flagship grape variety of Rueda, cultivated on the mesetic plateau of Castile at an altitude of over 700 meters. The continental temperature fluctuations between day and night preserve the natural acidity and protect the aromatic compounds—recognizable by the characteristic herbal spiciness that distinguishes Verdejo from other Spanish white wines.

The nose reveals ripe citrus fruit, a hint of passion fruit, and fresh herbal notes—thyme, a touch of fennel. On the palate, it is round and juicy, with a lively acidity that keeps the wine light-footed despite its richness. The finish is lingering, with a fine, pleasant bitterness—typical of the grape variety, typical of a good Verdejo.

Recommendation: Serve chilled at 10–12 °C. Pairs well with grilled prawns, goat cheese salad with orange vinaigrette, or light pasta dishes with herb sauces. Also a good choice as a casual summer evening wine on its own.
