The London N° 1 Sherry Cask 0.7L

A gin from Great Britain with barrel aging: The Sherry Cask from The London N° 1 is not clear, but a warm light yellow, combining classic gin production with maturation in sherry casks.

It is distilled in copper pot stills, after which 12 botanicals macerate in the distillate. The gin then matures for three months in American oak barrels that previously held Tio Pepe sherry, a dry Fino from Jerez. The color comes from these barrels, and they also shape the character in the glass.

The taste reveals fine wine-like and woody aromas that make the sherry influence palpable. This distinguishes it from unaged gins: a second, calmer layer of wood and wine is added to the gin base, giving it a unique note.

Recommendation: neat over ice, so that the barrel note unfolds slowly. For mixing, drinks where the gin remains in the foreground are suitable, such as a Martini or a Negroni. It also fits well in the glass as a digestif after a meal.
