Twelve years in Panama, finished with a coating in Tuscan Chianti barrels — the Demon's Share 12Y Chianti is one of the most unusual aging variations that Caribbean rum currently has to offer.
The Demon's Share alludes to the old pirate principle: what evaporates during barrel aging belongs to the devil. The distillery combines Panamanian distillate—known for its smooth, molasses-rich base—with the world of Chianti Classico. The barrel finish brings a European dimension to the mix that few other rums in the range offer.
The result of this combination is clearly visible in the glass: the typical Panamanian notes of caramel, roasted banana, and vanilla are complemented by red fruit, blackberry, and a slightly tannic spice from the wine barrel. The finish is long, with a hint of dry cherry and mild oak—elegant for a tropically aged rum.
Neat at room temperature, it unfolds its full spectrum of aromas. With a single ice cube, the fruitiness becomes even more pronounced. It also makes an excellent digestif after a Tuscan dinner—bistecca, pecorino, dark chocolate.
