The Caley is Yalumba's flagship wine — a blend of Cabernet Sauvignon and Shiraz that brings together two of South Australia's most renowned red wine regions: the warm Barossa Valley with its powerful Shiraz character and the cool, terra rossa-dominated Coonawarra, which gives the Cabernet its typical structure and length.
Yalumba is one of Australia's oldest family-owned wineries, founded in 1849 in the Barossa region. Five generations of Hill Smith have built the estate into one of the country's most prestigious — known for meticulous hand-harvesting and a style that combines power with finesse.
In the glass, The Caley displays a deep ruby color. The nose offers blackberry, cassis, and black plum, along with cedarwood and dark chocolate. On the palate, it features dense tannins, well-integrated acidity, and a long, spicy finish with a hint of eucalyptus—a typical characteristic of Australian Cabernet Sauvignon blends from the south.
Best served at 16–18 °C . Pairs well with braised lamb rump, mature cheddar, or a hearty roast beef. If desired, the bottle can be cellared for a few more years—The Caley continues to develop.
