Spaccatella
Apulian cherry tomatoes, halved and packed tightly into a jar — no concentrate, no additives except salt and fresh basil leaves. Immediately after filling, the jar passes through a steam tunnel at around 90°C. The tomatoes cook gently in their own light juices, retaining their color, fruitiness, and freshness.
In a jar, the Spaccatella tomato behaves like a ripe summer tomato straight from the market: juicy, slightly sweet, with the typical acidity of the date variety. It's delicious over pasta, in soups, on bruschetta, or as a base for pizza sauce—anywhere you'd call for fresh tomatoes. A Vermentino, a Sicilian Grillo, or a light Primitivo from its home region of Apulia pairs perfectly with it.
