
Silvaner Kniebrecher QW Franconia 0.75L
The Kniebrecher is Rudolf May's answer to the question of what Franconian Silvaner can achieve when you bring together the best grapes of two great sites: Himmelspfad and Rothlauf, harvested from the border strip between both. What lands in the glass is not a simple estate wine, but a dry-vinified Silvaner with the weight and substance that have earned this grape variety its reputation in Franconia.
Rudolf May farms his sites in the Maindreieck biodynamically — the grapes for the Kniebrecher grow on the shell limestone typical for Franconia, which gives the Silvaner its characteristic spice and minerality. The combination of Himmelspfad and Rothlauf brings depth: two terroirs, one wine.
In the glass, it shows ripe yellow pear, quince, and a hint of white pepper. The body is dense, the acidity taut but integrated, the finish long and characterized by a salty minerality — typical Franconia, typical Silvaner. Drinking temperature: 10–12 °C. Pairs with Tafelspitz with horseradish, asparagus with hollandaise sauce, or a strong goat cheese from the Jura.
