San Leonino Governo all'uso Toscano

Governo all'uso Toscano describes an old winemaking technique used in the Chianti region. It involves the use of partially dried grapes, similar to the Amarone method, resulting in a concentrated, rich wine. After the harvest, slightly raisin-laden grapes are added to the first new wine, initiating a second, slow fermentation in 90-hectoliter barrels that lasts until the following spring. The finished wine boasts a deep ruby-red color and intense aromas of red berries such as sour cherry, elderberry, prune, and a hint of violet. On the palate, it offers an elegant, full flavor, while remaining exceptionally harmonious and fresh.
