Risotto with asparagus

This risotto blend from La Balocchina combines Piedmontese round-grain rice with dried green asparagus — perfectly seasoned, including granulated broth. Piedmont is considered a classic growing region for risotto rice; the blend picks up on this tradition.

In the pot, the asparagus unfolds its mild, slightly bitter aroma and enlivens the starchy rice. Cooking creates a creamy, thick consistency. Small clumps in the dry mix are normal: the added broth absorbs moisture and dissolves completely during cooking.

As a primo piatto or side dish for grilled fish and light meat. Pairs well with a dry Soave or young Verdicchio — both with enough acidity to balance the creaminess.
