Puligny Montrachet Vieilles Vignes

Puligny-Montrachet is one of the most resonant names in Burgundy — a village that owes its reputation exclusively to Chardonnay and whose soils consist of deep limestone and clay-loam mixtures. Domaine Caire-Deveze manages old vines here, whose deep-reaching roots extract a concentration from the soil that young vines simply cannot deliver. Vieilles Vignes is not a marketing term, but a promise: less yield, more substance in the glass.

On the nose, the wine initially shows lemon zest and white peach, accompanied by a hint of fresh butter and brioche. With a little air, it opens up to nuances of acacia blossom and hazelnut. Beneath this lies the characteristic mineral line of the appellation — cool, precise, reminiscent of damp limestone. On the palate, a creamy texture combines with a lively, well-integrated acidity. Not a wine that creates density through force, but through concentration and length: the finish remains salty-mineral and lingers significantly.

Served at 10–12 °C, it unfolds its full spectrum. Classically, it pairs with turbot with beurre blanc, poached lobster, or scallops with saffron sauce. For those who prefer cheese: an aged Comté or Époisses from Burgundy itself are obvious companions. It also cuts a strong figure as an aperitif if you are looking for a white wine that works without food accompaniment.
