Puligny Montrachet 1er Cru Les Folatières

Les Folatières is one of the most renowned Premier Cru sites of Puligny-Montrachet — an east-facing hillside site in the northern part of the appellation, directly below the Grand Cru parcels Le Montrachet and Bâtard-Montrachet. The calcareous clay-limestone soil with its characteristic Kimmeridgian layer gives the Chardonnay here a minerality that cannot be found in any flat-site parcel. Domaine Caire-Deveze is a small family winery from Puligny-Montrachet that farms its parcels in this prestigious site with care and puts the character of the terroir in the foreground.

In the glass, the wine glows in a bright golden yellow with greenish reflections. The nose is precise and multi-layered: citrus zest, ripe white peach, and a hint of acacia honey meet wet chalk and freshly broken limestone. With some air, the wine opens up to notes of white blossoms and a fine buttery undertone. On the palate, it shows a lively, firmly integrated acidity that gives the wine tension and length without appearing too edgy. The texture is dense and creamy at the same time, the finish long, salty, and marked by a clear mineral line.

The wine pairs with pan-seared sole with beurre blanc, scallops with saffron sauce, or a mature Comté. It also cuts a fine figure with white asparagus with hollandaise sauce. Serving temperature: 11–13 °C.
