Young and mild in style: sweet and buttery in taste, with a delicate lactic acid note and little sharpness. The texture is soft without being sticky, the finish pleasantly short. Not a cheese that polarizes – one that unites.
On the table, it pairs well with fruit compote, tomato-mustard sauce, or fresh tomatoes with olive oil. Wine recommendation: a dry Soave, Vermentino, or a young, fruity Sangiovese – nothing too tannic that would overpower its mild character.
