Pouilly-Fumé stands for Sauvignon Blanc in its most mineral expression — and the "Le Champ des Vignes" from the Tabordet brothers shows why: fragrant, precise, with a depth that goes beyond the aromatic.

Yvon and Pascal Tabordet farm 8.5 hectares on the flinty subsoil of Pouilly, one of France's most defining terroirs for single-varietal Sauvignon Blanc. The winery is managed organically — the well-tended soils visibly contribute to the liveliness of the wines. The brothers stand for artisanal care in the Sancerrois, a region where Sauvignon Blanc unfolds a depth of character that is hard to find elsewhere.

In the glass, the wine shows aromas of elderflower and lemon balm, complemented by herbal, almost spicy notes. The minerality — a direct echo of the flint subsoil — gives the wine tension and length. Full-bodied in the mouth, yet clearly structured with invigorating acidity and a clean, dry finish.

Pairs well with goat cheese from the Loire, grilled sea bass, or a salad with herbs and vinaigrette. Serving temperature: 10–12 °C.
