Pimentón de la Vera has the protected designation of origin DO and comes exclusively from the La Vera Valley in Extremadura. This region in western Spain produces one of the most characteristic spices of Iberian cuisine.
After harvesting, the bell peppers are smoked over oak wood and then ground – a process that gives the sweet variety its deep, smoky aroma. The powder is a vibrant red color; on the palate, a mild sweetness is followed by a long, spicy-smoky finish without any heat.
Dulce is excellent on poultry before grilling, in pumpkin or potato soups, and on roasted eggplant. Shellfish also benefit from a pinch in their marinade. A dry Fino sherry or a Tempranillo from Ribera del Duero pairs well with it.
