Pinot Bianco from South Tyrol is one of the quiet classics of Italy — clear, precise, without noise. The Lepus from Franz Haas shows why this grape variety finds its most convincing form in the high altitudes of Alto Adige.

The Franz Haas winery is located in Montagna/Montan in the South Tyrolean lowlands and has been working with the steep slopes of the region for generations. For the Lepus, grapes from Guyot sites between 400 and 800 meters in altitude are vinified — a broad altitude spectrum that includes different soils: light sands in the lower zones, porphyry-containing weathered soils further up. This diversity gives the wine its characteristic tension.

In the glass, the Lepus shows aromas of white peach, pear, and a hint of almond, underpinned by a fine mineral note that reminds of chalk. The palate is slim and direct, with lively acidity and a clean, slightly salty finish. Not an overloaded wine — one that convinces through clarity.

Best served at 8–10 °C. Pairs with asparagus with hollandaise sauce, grilled char, mild goat cheese, or a simple risotto with herbs.
