After sun, dryness, and often already high temperatures in spring, the vines begin to bud earlier than usual. The summer, on the other hand, is comparatively cool with some rain showers, which provide the vines with the initially highly welcome water reserves, but which soon force the winemakers to rigorous vineyard hygiene to avoid rot and infections. At Paul Jaboulet Aîné, the harvest starts at the beginning of September with the white grapes. Then it is a matter of waiting until the red varieties reward this patience richly: with deeply colored grapes, ripe, silky tannin, balance, structure, and finesse. The harvest in the Crozes-Hermitage plots begins at the end of September. The grapes are completely destemmed in the winery, crushed, and fermented on the skins for around three weeks at controlled temperatures. The wines then age in the tank and in the bottle before they are released for sale.
