IbBiancoToscana IGT Tuscany

The IbBianco is a dry white wine from Tuscany with clear acidity and a light body. The name is the Tuscan short form of "il bianco" and describes the wine simply: a cuvée of 60% Vermentino and 40% Grechetto, which Casanova di Neri uses as a conscious experiment.

The grapes are harvested by hand in September and subsequently sorted manually and optically. Fermentation takes place spontaneously without added selected yeasts, in stainless steel tanks at a controlled temperature over 12 days. The result is a white wine with 11.5% ABV.

In the glass, light yellow with straw-yellow reflections. On the nose, citrus fruits and white flowers, plus a fine mineral note. On the palate, lively, with a clear acid structure and aromas of green apple, pear, and a hint of almond. The finish is elegant and lingering.

Serve it well chilled at 8 to 10 °C. It goes well with antipasti, grilled fish, seafood, or a salad with goat cheese, and it works as an uncomplicated aperitif on warm evenings.
