Eric Bordelet Sydre ArgeletteCidre sur Schiste 0.7

A cider that is more reminiscent of a mineral white wine than apple juice: The Sydre Argelette from Eric Bordelet is dry, fresh, and finely sparkling. It belongs to the ciders that one enjoys pouring into a wine glass.

Eric Bordelet was a sommelier in Paris before returning to the west of France and dedicating himself entirely to the apple. The cuvée is named after the soil: The apples grow on slate (schiste). This subsoil shapes the style you recognize in the glass: clear apple fruit, lively acidity, and a stony-mineral line that gives the cider tension.

The perlage is fine, the body light and lean, the finish dry. It works just as well as an aperitif as it does with hearty dishes of French cuisine: buckwheat galettes with ham and egg, rillettes, fresh goat cheese, oysters, or fried fish with butter. Serve it at 6 to 8 °C in a white wine glass so that the aromas can unfold.
