A white wine from the Languedoc that shows what Chardonnay can achieve outside of Burgundy: clearly structured, aromatically precise, with a minerality that one does not always expect here.

Domaine de Baronarques belongs to the Rothschild family and is located in the heart of the Haute Vallée de l'Aude, south of Carcassonne. The winery works with the cool high altitudes of the Pyrenees foothills — a terroir that gives white wines freshness and tension despite the southern climate. The Grand Vin Blanc is the estate's flagship cuvée.

Light yellow with green reflections in the glass. The nose shows lemon verbena, coriander, and white pepper — an unusually spicy profile for Chardonnay. Pear and anise follow on the palate, carried by lively acidity and a pronounced minerality that makes the finish long and dry.

Served at 10–12 °C, it pairs well with grilled sea bass, scallops with pea purée, or a young goat cheese from the Languedoc. It also makes a good figure as an independent aperitif.
