Small cherry tomatoes from Campania, preserved unpeeled in their own juice. The Ciliegino variety develops a concentrated sweetness with lively acidity, which is lacking in industrially harvested tomatoes.
Whole tomatoes in a jar, which can be crushed or pureed. For a quick sugo, ten minutes in a pan is enough – the tomatoes break down into a smooth, deep red sauce without any bitterness. Use it as a base for pizza, pasta alle vongole, or with steamed cod. If you prefer a more textured texture, leave the tomatoes roughly chopped and reduce the liquid only slightly.
A high-acid southern Italian white wine such as Fiano di Avellino or a light Aglianico, which complements the tomato acidity without overpowering it, would be a good match.
