A Haut-Médoc that shows what young commitment and organic farming can achieve in Bordeaux: structured, accessible, and with genuine character.
Sophie and David Faure founded Château Mille Roses only in 1999 — a newcomer by Bordeaux standards. On 9.5 hectares with sandy-gravelly soils in the Haut-Médoc, they farm exclusively organically. The site produces Cabernet Sauvignon that carries the typical characteristics of the appellation: clear structure, firm tannin, straightforward fruit — at a level usually associated with classified estates.
In the glass, it reveals dark blackberry and cassis, plus a hint of graphite and dried herbs, as the Médoc soil so likes to impart. The tannin is present but not angular — the wine remains drinkable without losing its seriousness. The finish is medium-length, spicy, with a slight hint of red bell pepper.
Served at 16–18 °C, it pairs well with an entrecôte with herb butter, braised lamb loin, or a strong hard cheese. A Bordeaux for everyday life that still shows poise.
